a small chunk ginger , finely grated
2 garlic cloves , crushed
1 green chilli , finely chopped
2 tsp ground cumin
2 tsp ground coriander
1 tsp turmeric
groundnut oil
1 whole chicken , about 1.5kg
1 x 165ml tin coconut milk
1 lemon , zest peeled off in strips
1 tsp mustard seeds
2 cardamom pods , bruised
300g basmati rice
